Last night a strong cookie craving had me raiding my cupboards for ingredients. Somehow I managed to make a batch of crazy-delicious macaroons without any sugar or flour on hand! These babies are mostly coconut, with ground oatmeal and maple syrup...and chocolate chips, because I had some.
1/4 cup soy or almond milk
1/3 cup coconut oil
1/2 cup maple syrup
1 teaspoon vanilla extract
1 cup oat flour*
1 1/2 cups dessicated coconut
1/2 teaspoon salt
1/2 cup Enjoy Life** mini chocolate chips (optional)
Preheat oven to 350ºF.
Blend the soy milk, coconut oil, maple syrup and vanilla together.
Combine the oat flour, coconut and salt in a large bowl.
Add the wet mixture and stir together.
Fold in the chocolate chips.
Scoop large spoonfuls onto a baking tray and bake for about 10 minutes,
or until the coconut starts getting toasty.
Cool and bite.
Depending on what kind of oatmeal you use, these cookies can be gluten-free. However, the proteins in oats are very similar to those in wheat, barley and rye, so some celiacs may experience an adverse reaction.
*To make oat flour, grind one cup of organic rolled oats in a food processor. I used the flat blade on my NutriBullet.
**Even though they aren't organic, I like to use Enjoy Life chocolate chips because they are made in a dedicated dairy-free facility.
