The last time I went to the Lexinton Co-op, they sadly had no Chocolate-Covered Peanut Butter Krispy Treats, the best vegan treats EVER. "Fine," I said. "I'll just make my own." This turned out to be a great idea, because making my own means making a WHOLE PAN, mwahhahaha. My first batch disappeared before I could photograph them...roommates.
Do you want your roommates to love you? Make them some peanut butter chocolate Krispy treats. Also known as "crack bars," according to what a Vox Pop barista once told me, if you want to get somebody hooked on vegan, this might be the way to do it.
I started with a recipe by the fabulous Dreena Burton for "Nicer Krispy Squares." Hers is the healthy version. I used peanut butter instead of macadamia butter and doubled the recipe up because my pan is bigger, then went for the whole chocolate-on-top extravagance.
I remember making Rice Krispy Treats for the first time, with my friend Rachel Stengel when we were seven. They are the perfect no-bake, no-fuss treat for warm autumn days and back-to-school lunches. They might even be a good treat for a Halloween party...
1 cup fresh ground peanut butter, creamy
1 cup brown rice syrup
1/2 cup organic sugar
2 teaspoons vanilla
1 teaspoon salt
1 teaspoon agar powder
8 cups puffed brown rice
1 tablespoon coconut oil
1 cup chocolate chips
In a large pot over medium-low flame, melt the peanut butter, rice syrup, sugar, vanilla, salt and agar. Stir continuously, until the mixture is smooth and bubbly. Remove from heat and add the puffed rice. Stir well to make sure all the puffs are coated. Don't burn your fingers.
Grease a 9" x 12" baking dish with a bit of coconut oil. Pack the puffed rice mixture into the pan and set aside.
Boil an inch of water in a small saucepan. Set a stainless steel bowl on top of your saucepan to create a double boiler. Melt 1 tablespoon of coconut oil and 1 cup of chocolate chips together, stirring constantly. Pour over the top of the peanut butter Krispy Treats and refrigerate until solid.
Slice them up and try not to eat all 12 at once.
